Cashew & Coconut Cookies
Lately I've been thinking a lot about making cookies with cashew butter. Don't know why, but I just have!
So, I got myself a delicious jar of Cashew Butter purely for cookie making purposes...
Little did I know how wickedly good these cookies would be... it's difficult to stop at one!
I got my 3 year old to help me mix the ingredients together and both kids adored the cookies!
Cashew & Coconut Cookies Recipe
1/2 Cup Cashew Butter (where to find cashew butter)
1/2 Cup Shredded Coconut
1/3 Cup Coconut Oil (where to find coconut oil)
1 Egg
1/4 Cup Coconut Sugar (where to find coconut sugar)
1 teaspoon Vanilla Extract
Pinch of Salt
1. Preheat the oven to 175°C (347°F) and line and grease a cookie tray.
2. Combine all of the ingredients together in a large bowl until a cookie dough forms.
3. Place a heaped teaspoon per cookie on the prepared cookie tray.
4. Place in the preheated oven and bake for 10 to 12 minutes or until just firm, as they set on cooling.
5. Allow to cool slightly then remove from the baking tray to a plate. I find they are easier to move while still warm as they are a little greasier from the cashew butter and coconut oil and dry on cooling.
Makes 15 Cashew & Coconut Cookies
