Raspberry Jelly Treats
Gelatin has been on my wishlist for ages (yes, I'm a little crazy!) and I finally ordered a couple of jars of nourishing grass feed gelatin and got straight to work experimenting with recipes...
This was the first gelatin recipe I made for the kids and they went absolutely CRAZY for them! (I've since made it a couple of times to get it just right!)
You can either set your raspberry jelly treats in little cups for the kids (as I've done above) or in a shaped jelly mold, like I did with these little squares. (where to find a jelly mold)
Raspberry Jelly Treats
1 Cup Raspberries (I used frozen)
0.5 Cup Water
2 to 3 Tablespoons Honey (where to find Honey)
0.5 to 1 Tablespoon Gelatin (where to find Gelatin)
1. Place the raspberries, water and honey over low heat in a small saucepan.
2. Cook over low heat until raspberries soften and the mixture forms a raspberry jam like consistency.
3. Add the gelatin and mix through.
4. Continue to cook briefly over low heat to allow for the gelatin to absorb.
5. Remove from heat and pass through a sieve if you want a super smooth texture.
6. Allow to cool to room temperature and then spoon into molds.
7. Refrigerate for a few hours then un-mold your raspberry jelly treats.
8. Keep refrigerated as they are likely to melt if they're kept out of the fridge for too long.
Makes 1 Cup
Next, I'm going to be moving on to experimenting with chocolate treats with gelatin, by request of the kids!

I am a jello addict. I've been making a cherry/honey version exactly like yours. it's one of my favorite treats. we have hundreds of fresh raspberries in the garden so this sounds like a good flavor switch for me.
