Sugarless Coconut Macaroons - Wordless Wednesday



These Sugarless Coconut Macaroons are Kosher For Passover and Gluten Free. They originate from The Paleo Diet Cookbook. You don't have to be on the Paleo Diet to enjoy the book though, it's full of incredible and unique Sugar Free and Gluten Free Recipes. I've found tons of delicious recipes, that have become family favorites, including some interesting recipes including Coconut and my favorite - Chicken with Macadamia Topping.

To make the Sugarless Coconut Macaroons, you simply beat 3 egg whites until stiff, then fold in 1 and 1/2 cups dessicated coconut, 1/3 cup almond meal and 1/3 cup of honey.

Place tablespoons of the mixture onto a greased baking try and bake in a 180°C preheated oven for 15 minutes.

My oven doesn't have a 180 setting guess you are using an oven thermometer or baking with a Celsius oven I usually bake really delicate cookies at 350 and sturdier at 375 F.

Yes, I'm in Australia so I follow the metric system/Celsius, so 180 is about 350F. Hope that helps!
