Passover Pineapple Cake

I baked this simple and moist Passover Pineapple Cake for our Seder the other night and it received rave reviews. I just had to share it with you, so you can enjoy this delicious Passover treat too.
I adapted this recipe from a cookbook I have on permanent loan from my Mum. It was one of the books that her late Mum used to cook from, a Jewish cookbook from South Africa from around the 60’s. I love paging through the book, knowing that they are recipes that my Grandmother cooked for her family. (including 7 children, my Mum being the youngest!) It’s unreal to be carrying on traditions with food.
I decided to use the leftover pineapple juice to boil a syrup to pour over the baked cake – this addition results in a moist, yet firm cake.

Passover Pineapple Cake
4 Eggs, Separated
¼ Cup Sugar
½ Cup Fine Matzo Meal, sifted
1 X 400g Tin Pineapple Chunks
1 Grated Orange Rind
1. Preheat the oven to 170°C and grease a round pie dish.
2. Beat the yolks and then add the sugar and beat until creamy.
3. Stir through the sifted Matzo Meal and orange rind.
4. Drain the pineapple, reserving the liquid for the syrup (recipe follows) and mix the pineapple chunks through the egg yolk mixture.
5. In a separate bowl, beat the egg whites until stiff then fold them through the egg yolk mixture.
6. Pour the mixture into the prepared pie dish and bake for 25 to 30 minutes, until golden and firm.
7. As soon as the Pineapple Pudding is out of the oven, make the syrup. (recipe below)
8. Using a toothpick or skewer, poke holes all over the Pineapple Pudding and while it’s still warm, pour over the Pineapple Syrup. The cake will quickly absorb all the syrup.
9. When cool refrigerate and consume within a few days.
Pineapple Syrup
½ Cup Pineapple Juice (reserved from the Pineapple Pudding above)
2 Tablespoons Icing Sugar
1. In a pot over low heat on the stove, dissolve the sugar in the pineapple juice.
2. Bubble the syrup away for a few minutes, then take off the heat and pour over the cake. (directions above).
