Breakfast Idea - Coconut Quinoa Porridge




Following on from yesterday's Breakfast in a Jar, and your comments on struggling with organizing a healthy family breakfast, I thought I'd share another fun Breakfast Idea with you for a little extra inspiration.

This Quinoa Porridge is positively simple to prepare, so simple in fact that I can do it in a "Wordless Wednesday" Post (well, less words than usual for "chatty" me!)

Quinoa has become such a trendy and popular ingredient due to it's phenomenal health benefits, so having a generous serve for breakfast is a great, healthy way to start the day. I liked mine with a little Homemade Rhubarb Jam stirred through at the table - just yummy!

Breakfast Idea - Coconut Quinoa Porridge 
Adapted from Australian Good Food Magazine - April 2012 
1 and 1/2 Cups Quinoa (where to find quinoa)
4 Cups Water
1 Cup Coconut Milk (where to find coconut milk)
1/2 Cup Milk
3/4 Cup Dried Cranberries (where to find dried cranberries)
2 teaspoons Raw Honey (where to find raw honey)

1. Rinse the Quinoa over, remove any gritty pieces and drain really well to clean of all possible dirt.
2. Place the Quinoa and water in a pot on the stove and bring up to the boil.
3. When boiling, reduce the heat and simmer gently for 10 minutes.
4. Once the Quinoa has started to become tender, add the coconut milk and milk and continue to cook until the Quinoa is tender and most of the milk has been absorbed.
5. Stir through the dried cranberries and honey and serve.
6. Makes 4 to 6 portions

I'm always on the lookout for more Breakfast Ideas and have been incredibly inspired by the book "Awaken: 30+ Egg Free and Grain Free Breakfasts".



There are seriously so many irresistible recipes I can't wait to try, from meats, to savoury to sweets there's something for every breakfast mood. Considering I've been relying so much on eggs for breakfast lately, it's fantastic to have so many non-egg breakfast options. In particular, I'm looking forward to trying the Chocolate Smoothie and making the Cinnamon Cereal for the kids.

This sounds really good, I've been on a raw diet for about 6 months and having fresh coconut almost daily, the past couple months, It's made an incredible difference in my skin, When I transition back into cooking this sounds like something I'd want to try, thanks for sharing a fantastic healthy recipe.

Ooh: That looks good! I heart quinoa in all its savory versions, but I've been skeptical about using it for brekkies until I saw your recipe. Somehow the coconut milk seems to offer a sound foundation and the cranberry a tartness that would play well with quinoa's specific flavor. I may just cook up a batch right now!
