Mashed Cauliflower (GAPS, Paleo)
While hunting for GAPS Diet Recipes, I've discovered that most Paleo Diet Recipes, with just a little tweaking, also happen to be GAPS friendly.
Inspired by this revelation, I have scoured the blogosphere for delicious Paleo Recipes which I can add to my growing list of GAPS Friendly Recipes in preparation for our upcoming GAPS Diet Adventure. In following on from "To GAPS Or Not To GAPS" we have now made the decision, that yes, we will be embarking on a GAPS Diet journey, starting late December. (More info to come in the coming weeks and months...)
So, I've been following and subscribing to an abundance of Paleo Blogs and Websites and have been overwhelmingly inspired by the mouthwatering and creative dishes I have found.
This Mashed Cauliflower from The Clothes Make The Girl is the first Paleo Recipe I have tried out on the family. It also happens to be GAPS legal, which is especially fantastic as the whole family adored the Mashed Cauliflower and I see it being a staple/lifesaver/mashed potato replacement while on our GAPS Journey.
Mr 4 usually nibbles at cauliflower (if I'm lucky!) and with this Mashed Cauliflower he wolfed it down by the spoonful. I served the Mashed Cauliflower to the kids in a Muffin Tin Meal, along with some beef stew, cooked carrots and cauliflower. This also happens to be a Paleo/GAPS friendly Muffin Tin Meal. You may wonder why I served mashed cauliflower along with cooked cauliflower in a beef stew. There are 2 reasons - firstly, I like to demonstrate to the kids the different forms a vegetable can take, in this instance being cooked and mashed. Second, the cauliflower was SO huge (see below!) that there just wasn't room in the pot I was cooking the mashed cauliflower in to cook all the cauliflower I'd chopped, so I simply threw the rest into the beef stew pot!
The Mashed Cauliflower is creamy, yet savory, with a subtle coco-nutty flavor. On the subject of coconut, I felt it could have done with a tiny bit more coconut milk and my Husband felt that it could have done with less! So, I'd say make it to your family's tastes, increasing or decreasing the coconut milk quantity accordingly. (where to find coconut milk)

I'm glad you posted this! We've been loving mashed "GAPS potatoes," as I call the mashed cauliflower, for some time. After months off potatoes, you really forget their flavor (we didn't consume many white potatoes pre-GAPS, either, so that might have something to do with it, LOL). I've even tried to "stump" guests with our GAPS potatoes and they all love the mashed cauli!
Great to hear from another Mashed Cauliflower Fan. Yes, they are a delicious mashed potato alternative... think they will be our staple when we start GAPS soon!
