Homemade Popcorn



We Love, Love, Love Popcorn in our house. In fact through both my pregnancies I ate bowlful after bowlful of popcorn (through my first pregnancy I think I lived on it!) - so the boys were even enjoying the healthy snack before they were born!

I admit that in the past most Popcorn we ate was of the Microwave variety. Since getting rid of our microwave recently though, I've started to cook popcorn on the stove-top and the flavor is oodles better and of course it's so much healthier too.

Popcorn is the perfect healthy kids snack and it's packed with more anti-oxidants than fruits and vegetables, which makes it's a snack that's really, really good for you too.

I had always been a little apprehensive to make Popcorn on the stove-top, I thought it would be too tricky, but it turns out it's really easy. And - the kids love seeing the corn pop on the stove top. (from a safe distance of course)

I make my popcorn with coconut oil. I love the coco-nutty flavor of the coconut oil and the health benefits are an added bonus. I find that the best method (and safest) for cooking popcorn with coconut oil is to heat the kernels up in the oil, rather than adding them later as is usually suggested. It works for me every time!

As well as serving Popcorn to the boys as a snack, I often serve popcorn as the carbohydrate portion of their meals. In this meal, I served the popcorn topped with butterflies that I cut from cheese, dark purple grapes (that look like black olives!), and a salad of spinach and mini tomatoes. (You may recognize this lunchbox - it also featured in last week's post "How To Get Your Fussy Eater To Try New Foods", highlighting some of the new foods my fussy Mr 4 now enjoys!)


Homemade Popcorn
1/2 Cup Corn Kernels
2 Tablespoons Coconut Oil
Salt to taste

1. Place the corn and coconut oil in a large pot, with a tight fitting lid on the stove top. Turn the heat on to medium and shake the pot about frequently to prevent burning and ensure all the kernels are heated evenly.
2. Continue to shake as the kernels start to pop and keep shaking until all the popcorn is popped.
3. Remove from heat and allow to cool slightly before carefully tipping into a large bowl and adding salt to taste. 


Popcorn makes the perfect snack for October Unprocessed!

I am with you on making your own popcorn! What caused us to use the microwave packets in the first place? We switched back to stovetop popped a couple of years ago and have never stuck it in the microwave since! I've never popped in coconut oil. I'm definitely going to have to give that a try. I usually use my roasted garlic infused olive oil. Great post!

Stove top popcorn is the only kind I make. It's one of my favorite snacks!

I love stove top popcorn! I usually cook mine in a light (not virgin) olive oil then after cooked top it with more light olive oil, sea salt, garlic and Braggs herb Sprinkles. It's so yummy and always a hit when I take it to potlucks.
