Rhubarb French Toast & Breakfast Ideas Mondays #7



It's only in the past year that I've started cooking Rhubarb, I don't quite know why it took me so long, but, like with Pomegranates, once I started cooking with it, I loved it and often buy a bunch to enjoy.

For this dish you can use any jam or fruit puree of your choice. I used a homemade Rhubarb Jam.

To make the Rhubarb French Toast, for each piece of bread you are using beat 1 egg along with 1 tablespoon of Jam and a dash of milk. Dip the bread into the batter and allow it to soak up the mixture for a minute or so before turning it over so it can soak through to the other side. Fry until golden on both sides.

Serve as is or drizzled with a little honey or even spread with a bit more jam.

In the below image there are the pieces of Rhubarb (1) about to be cooked into Rhubarb Jam, which is then mixed through the egg (2) to form the french toast batter (3) which the bread soaks up (4).


I served the Rhubarb French Toast to Mr 3 in a Breakfast Muffin Tin Meal. I served it along with some strawberry jam for dipping. Usually when I make him french toast he barely eats half a piece, but serving it this way he polished off the whole meal in no time and asked for more! Success with my picky eater! What more could I ask for?

I have never cooked with rhubarb because I had no idea how. Thanks for sharing and thanks for the recipe, it looks great. Love your linky. Unfortunately I have nothing spectacular to add, but I will be back to check out what others add. Can always use new ideas for our Breakfast for Dinner Thursdays.
